This is definitely farmers food. Sticky rice and catfish.
I was told that quite a few times as I attempted to shape out a sushi roll.
In the hands of a foreign chef, something weird and frightening indeed. A foreign, evil, unwanted interference.
It actually came from a farm up in Chiang Rai though. And this particular 'farmer' had turned the local turned peasant snack into something special…….mainly because I was too clumsy and awkward to eat it local style.
This is my "Chiang Rai maki roll"
And I love it.

A couple of years ago during my 3 month clulinary 'sabbatical' in rural North Thailand, we ate a lot of sticky rice.
Food dripped across my shirt, the mat, the floor and a few trails of sauce down my wrist and ankle just to be sure.
I hobbled out on my surgically butchered, slowly recovering ankle and he handed me a wonky white cylinder and gestured "eat".
